Tequila with D.O. (Denomination of Origin) is recognized in five states. This popular agave spirit is mostly produced in Jalisco, and only agave tequilana Weber blue variety can be used.

In tequila, the term “mixto” means it is made with mixed sugars (primarily cane sugar and at least 51% agave tequilana). Mixto is the most popular type since it is cheaper and allowed to be exported in bulk.

Label in tequila means it is mixed sugars (mostly cane and min 51% agave tequilana) is the most popular as it is cheaper and is allow to be exported by bulk.

TEQUILA 100% AGAVE

Tequila 100% agave is consider higher quility as it is pure and can only be exported bottled in origin.

5 clases any tequila:

  • Blanco or silver: clear agave spirit with no aging more flavors and aromas of agave.

  • Joven or gold: absically it’s a blanco with color and flavors natural or artificial.

  • Reposado / aged: aged min 2 months.

  • Añejo / extra aged: aged min 1 year.

  • Extra añejo / ultra aged: aged min 3 years.

AGAVE SPIRITS

SPIRITS DISTILLED FROM AGAVE

We can find over 100 species of agaves in Mexico. Approximately 40 of them can be cooked, squeezed, fermented, and distilled to become an “Agave Spirit,” also referred to as “Agave Distillate.”

 

Some of these spirits can be certified according to the denomination of origin, taking into consideration the state, process, type of agave, and regulatory council, among other factors.

Our Services

Mezcal

From classic processes to rare limited editions, mezcal offers a wide variety of options, as more than 20 types of agave are used in the industry. Some are cultivated, some grow wild, making mezcal as complex as wine.

 

We work with different agaves from various regions. The most popular agave is Angustifolia (Espadín). Unlike tequila, mezcal batches are usually 1,000 liters. The agave is cooked underground, giving it a characteristic smoky profile.

 

Limited editions reflect our passion for crafting mezcal from wild agaves. Feel free to ask about the treasures we hold available, depending on the season.

Raicilla

Raicilla is the most recent agave spirit with a Denomination of Origin.

It is located in the heart of Jalisco state, with varieties found from the Sierra area to the seaside region.

Eighty percent of production comes from the Maximiliana (Lechuguilla) agave.

The other agaves you can use to make Raicilla are:

  • ANGUSTIFOLIA 

  • rhodacantha

  • Inaquidens

  • Valenciana

Sotol

This is the only spiritnot made from agave. It is made using a plant called Dasylirion.

Sotol has a Denomination of Origin and is located in the north of Mexico, including the states of Chihuahua, Coahuila, and Durango. 

Whether from the desert or the Sierra, this amazing spirit has cultivated the palates of many sommeliers due to its complexity in aromas and flavors.

Note: This plant can also be found in Oaxaca, offering distinct flavors. There, it is known as “Cucharilla.”

The rebel of the family. As mentioned before, an agave spirit is what you get after the process of distilling any agave. Producers have the freedom to decide whether they want to follow the strict verification and certification of the Denomination of Origin regulatory council. If they choose not to certify their product, it will simply be named: Agave Spirit.
